I LOVE bean lasagne in the winter. So if you are a bean and lasagne fan, then here is my simple bean lasagne recipe! This recipe is vegan, wheat free and gluten free! Enjoy!
Delicious Bean Lasagne Gluten Free, Wheat Free and Vegan
You will need:
Gluten Free lasagne sheets (Waitrose Love Life)
2 tins of Mixed beans in a spicy or tomato sauce (Waitrose canned mixed beans)
150g Non dairy cheddar cheese, grated (Violife-made in GREECE!)
For the béchamel sauce:
2 tablespoons buckwheat flour or plain gluten free flour
2 ounces vegan butter
1/2 pint of milk (I used soy)
(Add all to a saucepan and cook on a low heat, mixing until the sauce is thick, then take off heat)
Method:
1. Place the lasagne sheets in some boiling water to soften for about 5 mins, then drain
2. Place the lasagne sheets in an oven proof dish, layer around 4 sheets at the bottom (I use a 12inch by 8 inch dish)
3. Add 1 tin of the mixed beans with sauce and sprinkle on some grated cheese
4. Place a second layer of lasagne sheets on the top
5. Add the other tin of mixed beans
6. Add béchamel sauce
7. Add the rest of the cheese
8. Cook at 180°C for around 40 mins until the top is crispy
