Delicious Bean Lasagne Gluten Free, Wheat Free and Vegan

Ingredients
Gluten Free lasagne sheetsWaitrose Love Life
2tins of Mixed beans in a spicy or tomato sauceWaitrose canned mixed beans
150gNon dairy cheddar cheesegrated (Violife-made in GREECE!)
For the béchamel sauce:
2tablespoonsbuckwheat flour or plain gluten free flour
2ouncesvegan butter
1/2pintof milkI used soy
Instructions
Method:
Place the lasagne sheets in some boiling water to soften for about 5 mins, then drain
Place the lasagne sheets in an oven proof dish, layer around 4 sheets at the bottom (I use a 12inch by 8 inch dish)
Add 1 tin of the mixed beans with sauce and sprinkle on some grated cheese
Place a second layer of lasagne sheets on the top
Add the other tin of mixed beans
Make béchamel sauce by adding all the béchamel sauce ingredients to a saucepan and cook on a low heat, mixing until the sauce is thick, then take off heat
Add the rest of the cheese
Cook at 180°C for around 40 mins until the top is crispy
