Gluten Free Custard Pie

Custard Pie! You asked, I listened! A lot of people have been asking me for a Galaktoboureko (γαλακτομπούρεκο) recipe, which is a Greek dessert consisting of semolina custard in filo. Now unfortunately I cannot make anything with filo, as it is not gluten free and trying to get the same consistency of filo using gluten free ingredients is incredibly difficult. So this is my version of a custard pie. It is not too sweet, and not as heavy as a traditional Galaktoboureko.

Mouthwatering Watermelon and Halloumi Salad

The weather is hotting up and I just really want to stuff my face with some delicious mouthwatering watermelon and halloumi salad! Watermelon or Καρπούζι in Greek is one of my favourite fruits.

Ah Moussaka! This is a very popular dish in Greece. For those who have seen the film ‘My Big Fat Greek Wedding’ you will know all about Mousse kaka, I mean moussaka! Moussaka is usually made with lamb mince but we make it with beef mince.

Lamb Pasta Bake

I absolutely love lamb pasta bake. As you all have probably guessed, I don’t like faffing when it comes to my food. I like making grub that tastes good and I try to use ingredients that don’t cost the earth. Bish bash bosh job done! This week, I made a lamb pasta bake, with courgettes, spring onions and parmesan cheese, with a few large spoonfuls of Greek yoghurt.
