Time for tea and Victoria Sponge Cake

Is it time for tea? Oh I do love a Victoria sponge cake. One of my very first cakes that I made when I was first diagnosed with coeliac disease was a Victoria sponge. Some people just add jam to their Victoria sponge cake, but I use jam and cream. I also brought out the mad hatter teapot because I couldn’t enjoy my tea and cake without him!

Chocolate Goo Cake

Vegan, gluten free, wheat free, nut free and delicious!
I made the very popular chocolate goo cake this week, which is just scrumptious with strawberries!

Mouthwatering Watermelon and Halloumi Salad

The weather is hotting up and I just really want to stuff my face with some delicious mouthwatering watermelon and halloumi salad! Watermelon or Καρπούζι in Greek is one of my favourite fruits.

It’s Moussaka not mousse kaka!

Ah Moussaka! This is a very popular dish in Greece. For those who have seen the film ‘My Big Fat Greek Wedding’ you will know all about Mousse kaka, I mean moussaka! Moussaka is usually made with lamb mince but we make it with beef mince.

Carrot Cake in a Microwave

I have never made a cake in a microwave before and was intrigued by how my carrot cake in a microwave would turn out! This carrot cake was very moist and incredibly delicious! I was a little unsure about making a cake this way, but I think it turned out pretty well!
