Gluten free banana and chocolate chip muffins are extremely tasty and don’t require a lot of time or ingredients. They are also made in one bowl so it makes the washing up so much quicker! I used up 4 bananas that I had in the freezer. Banana cake is my usual choice for Sunday afternoon but today I thought that muffins were a good idea! I am trying to be less wasteful with food and have been closely following Nancy Birtwhistle for inspiration. She has so many great ideas for cooking and cleaning as well as gardening. For this recipe, you could make it vegan by substituting the butter and the eggs with plant based milk, butter or avocado oil. Some recipes also use apple cider vinegar. I chose to use light brown sugar but you could use granulated sugar, but the colour of the muffins will look different.
I used the James martin muffin tray for these and they turned out pretty well I think! This muffin recipe is very versatile as well. Instead of using chocolate chips, you could use blueberries or raisins.

Gluten free banana and choc chip muffins
Delicious muffins without the hassle!
Ingredients
- 4 overripe bananas I used frozen ones without the peel
- 2 medium eggs
- 60 g unsalted butter you could use other alternatives such as avocado oil or soy milk
- 2 tsp vanilla extract
- 200 g gluten free flour
- 90 g demerara sugar you could use granulated but the colour will be different
- 1 tsp baking powder
- 80 g chocolate chips Keep the rest for sprinkling
Instructions

Preheat the oven to 350°f / 180°c. Grease and line a muffin tin with 12 muffin liners

In a bowl, mash the bananas and then whisk together the butter, the sugar, eggs and the vanilla extract

Add the flour and the baking powder a little at a time and whisk again until combined

Sprinkle in the chocolate chips and fold in

Using an ice cream scoop, divide the batter evenly into the muffin liners, filling them near to the top. Sprinkle with a few extra choc chips.

Place tray in the middle of the oven and bake for 20 mins or until the tops spring back when lightly pressed.

Remove from the oven and allow to cool for 15 mins.
