Warming chicken and vegetable soup to enjoy on these cosy autumnal nights sitting by the fire. Autumn is my favourite time of year and get a buzz out of changing my clothes and makeup to autumnal colours. I love making soup and cosy dishes as they bring back such fond memories of my childhood and preparing for Halloween and bonfire night! I made this meal with my leftovers from a Sunday roast. This way, nothing goes to waste, and I made a big batch of this as well! When I was at university, I used to always stock up on tins of soup, and always had a bunch of ready meals. It’s always nicer and healthier to make it yourself and enjoy a soup that’s homemade!

Chicken soup
Tasty warming chicken soup.
Ingredients
- 1 tin butterbeans
- 6 shallots
- 3 carrots
- 3 turnips
- A bag red potatoes
- 4 sweet potatoes
- leftover chicken pieces remove from bone
- 1.5 litres gluten free chicken or vegetable stock
Instructions

Peel and slice all the vegetables and place in a large pot filled with around 1.5 litres of vegetable or chicken stock. Leave to simmer until soft.

Add in the butterbeans and the chicken and give it all a mix.

Leave to simmer for a while before blitzing the soup into a puree form and add salt and pepper.

Transfer back to large pot and enjoy!
