I have been cooking with sweet potato and courgettes a heck of a lot recently. Courgettes and sweet potato can be used and adapted in so many recipes. I thought I would try making some healthy fritters. They are gluten free, wheat free and can be dairy free if you use an alternative to the natural Greek yoghurt. This is a nice recipe to make for young children to introduce them to some new foods.
Courgette and Sweet Potato Fritter Recipe-Makes 20-25 small fritters
Gluten Free, Wheat Free
You will need:
2 courgettes
1 sweet potato, peeled
1 potato, peeled
½ an orange
½ a red pepper
1 onion
2 eggs
1 tablespoon mint
3 heaped teaspoons natural yoghurt (I used Total Greek Yoghurt)
pinch of salt and pepper
pinch of paprika
100g gluten free plain flour
1 tablespoon cornflour
What to do:
1. Finely chop the vegetables.
2. Add all the ingredients to a blender until they form a smooth paste.
3. Add some vegetable oil to a frying pan and carefully spoon blobs into the pan, turning over until both sides are crispy and golden.
4. Continue doing this until you have used up the mixture.
5. Make sure that your mixture isn’t too runny. Otherwise it will be an absolute nightmare to make it into a fritter. Try and use a non stick pan. If you find that the mixture is a little runny, add some more flour.
6. And there you have it! Enjoy!

I shall try it. I have had IBS for years and it’s only now that I am trying to do something to alleviate the problems. Gluten free might help. Regards Vic Gilbert. ps Has your dad moved into the 21st century yet with at least an Android phone?
