Want to create a fancy looking starter to impress your friends? I have created a sweet potato and prawn appetiser dish that is simple and delicious! I have taken inspiration from Chef Mick Élysée. His cookbook ‘Not Guilty‘ is full of inspirational recipes that will definitely tickle your tastebuds! I previously tried out one of Mick’s Recipe’s and wrote a post for the Not Guilty Blog Tour where I tried out the Yam Bruschetta recipe.
Sweet potato and prawn appetiser Makes 4 small dishes for a starter
Gluten Free, Wheat Free
You will need:
1 large green pepper
200g ready to eat prawns
4 sweet potatoes
½ chilli pepper deseeded and chopped finely
coconut oil
What to do:
1. Bring water to the boil.
2. Peel and dice the sweet potatoes and boil for 5 to 10 mins until soft.
3. Finely slice the green pepper and finely chop the chilli
4. Add a tablespoon of coconut oil to a frying pan, and simmer on a low heat.
5. Add the pepper and chilli to the pan.
6. When pepper and chilli are soft, add in the potatoes and the prawns.
7. Fry on a low heat for 5 mins.
8. Place in a small dish and serve!
