Sweet potato and prawn appetiser
Makes 4 small dishes for a starter

large green pepper

ready to eat prawns

sweet potatoes

chilli pepper deseeded and chopped finely

coconut oil

Bring water to the boil.

Peel and dice the sweet potatoes and boil for 5 to 10 mins until soft.

Finely slice the green pepper and finely chop the chilli

Add a tablespoon of coconut oil to a frying pan, and simmer on a low heat.

Add the pepper and chilli to the pan.

When pepper and chilli are soft, add in the potatoes and the prawns.

Fry on a low heat for 5 mins.

Place in a small dish and serve!
