Sweet potato and prawn appetiser

Makes 4 small dishes for a starter

Ingredients

  • 1 large green pepper
  • 200 g ready to eat prawns
  • 4 sweet potatoes
  • ½  chilli pepper deseeded and chopped finely
  • coconut oil

Instructions

  1. Bring water to the boil.
  2. Peel and dice the sweet potatoes and boil for 5 to 10 mins until soft.
  3. Finely slice the green pepper and finely chop the chilli
  4. Add a tablespoon of coconut oil to a frying pan, and simmer on a low heat.
  5. Add the pepper and chilli to the pan.
  6. When pepper and chilli are soft, add in the potatoes and the prawns.
  7. Fry on a low heat for 5 mins.
  8. Place in a small dish and serve!
