Lamb hotpot

Lamb hotpot perfect for the whole family

Ingredients

  • 500 g minced lamb
  • 1 pepper or chilli pepper (without seeds)
  • 1 tin of tomatoes
  • 1 large onion
  • gf stock cube
  • 3 sweet potatoes
  • 4 large red potatoes
  • 2 oz cheese

Instructions

  1. Cook lamb mince in a large cooking pot on low heat with 1 litre of the stock

  2. Add peppers, onion and tin of tomatoes

  3. Cook mince for around 40 mins to 1 hour on low heat until soft and a little juice remains

  4. Add to the bottom of the ovenproof dish

  5. Slice potatoes and boil for 10 mins until tender

  6. Drain and place potato slices over the top of the mince meat.

  7. Grate 2 oz of strong cheese

  8. Place dish in oven at 180°C for 30 mins until baked and crispy.

Recipe Notes

Any leftover potatoes can be mashed with cream, butter and cheese.
