Slow cooker beef stew

  • 350 g diced beef
  • 4 carrots chopped
  • 4 parsnips
  • 1 tin tomatoes
  • 1 litre gluten free beef stock cube
  • 400 g white rice


  1. Season the beef with salt and pepper

  2. Add some olive oil to a saucepan and place on medium heat. Lightly brown the beef

  3. Add the beef to the crockpot. Add in 1 litre of stock and the tin of tomatoes. Put on low heat for 6 hours, checking the tenderness of the meat every now and again.

  4. Chop up all the vegetables and soften in boiling water for around 15 minutes until almost soft.

  5. Place the chopped vegetables into the stockpot. If you need to add more liquid, then you could add another tin of tomatoes.

  6. Put the crockpot on high for 30 mins. Your meat should be tender but if not it may need a little longer.

  7. Place rice in water medium heat for around 15 minutes until soft and fluffy.

  8. When done, taste stew for seasoning. You may want to garnish it with herbs.

Recipe Notes

Times may be different depending on your slow cooker. My crockpot is a small 6.5 l capacity, so if you have a bigger crockpot timings will be different.
