Delicious Bean Lasagne Gluten Free, Wheat Free and Vegan

Ingredients

  • Gluten Free lasagne sheets Waitrose Love Life
  • 2 tins of Mixed beans in a spicy or tomato sauce Waitrose canned mixed beans
  • 150 g Non dairy cheddar cheese grated (Violife-made in GREECE!)
  • For the béchamel sauce:
  • 2 tablespoons buckwheat flour or plain gluten free flour
  • 2 ounces vegan butter
  • 1/2 pint of milk I used soy

Instructions

  1. Method:
  2. Place the lasagne sheets in some boiling water to soften for about 5 mins, then drain
  3. Place the lasagne sheets in an oven proof dish, layer around 4 sheets at the bottom (I use a 12inch by 8 inch dish)
  4. Add 1 tin of the mixed beans with sauce and sprinkle on some grated cheese
  5. Place a second layer of lasagne sheets on the top
  6. Add the other tin of mixed beans
  7. Make béchamel sauce by adding all the béchamel sauce ingredients to a saucepan and cook on a low heat, mixing until the sauce is thick, then take off heat

  8. Add the rest of the cheese
  9. Cook at 180°C for around 40 mins until the top is crispy
