Courgette and Sweet Potato Fritter Recipe-Makes 20-25 small fritters

Ingredients

  • 2 courgettes
  • 1 sweet potato peeled
  • 1 potato peeled
  • ½ an orange
  • ½ a red pepper
  • 1 onion
  • 2 eggs
  • 1 tablespoon mint
  • 3 heaped teaspoons natural yoghurt I used Total Greek Yoghurt
  • pinch of salt and pepper
  • pinch of paprika
  • 100 g gluten free plain flour
  • 1 tablespoon cornflour

Instructions

  1. Finely chop the vegetables. Add all the ingredients to a blender until they form a smooth paste. Add some vegetable oil to a frying pan and carefully spoon blobs into the pan, turning over until both sides are crispy and golden.

  2. Continue doing this until you have used up the mixture. 

  3. Make sure that your mixture isn't too runny, otherwise it will be an absolute nightmare to make it into a fritter.
  4. Try and use a non stick pan. If you find that the mixture is a little runny, add some more flour.
