Easter Simnel Cake

It’s Easter Bank Holiday Weekend! I decided to make a traditional British Easter Cake for my Easter celebrations. It is called Simnel cake. Simnel cake is a light fruit cake made at Easter, originally made for the middle Sunday of Lent. It is usually made with 11 marzipan balls to represent the apostles, excluding Judas. This easter simnel cake has been adapted from Mary Berry’s recipe! Enjoy!

I couldn’t have a gluten free greek blog without sharing my simple and tasty pastitsio recipe. Pastitsio is an Italian word, but the Greeks and Mediterranean’s all have their own variations. This is a dish that my mum has made time and time again for family and friends who may not want to stuff their faces with souvlaki but still want a ‘little’ meat.
