I have been cooking with sweet potato and courgettes a heck of a lot recently. Courgettes and sweet potato can be used and adapted in so many recipes. I thought I would try making some healthy fritters. They are gluten free, wheat free and can be dairy free if you use an alternative to the natural Greek yoghurt.
