This prawn dish is something my mum and I threw together one night when we were thinking about what to cook for dinner. It's an easy dish to fill those hungry bellies as you only need a few ingredients: rice, prawns, courgettes, cheese and veg! Lovely combo when you want to bring a touch of the mediterranean to your home!
