Soft Macaroons!

I’ve got a love-er-ly bunch of coconuts! This week, I wanted to try using different ingredients in my baking, and so have tried a coconut flour recipe. Enjoy!

For these soft and spongy macaroons you will need:

85g coconut flour

1/2 teaspoon baking powder

1/4 teaspoon sea salt

3 eggs

1/2 cup/118ml of coconut oil, melted or sunflower oil

1/2 cup/118ml of Honey or Maple Syrup

1 teaspoon vanilla extract

200ml coconut milk

1) Pre-heat oven to 180°C

2) In a small bowl, mix all of the dry ingredients together and set aside

3) In a medium bowl, beat eggs and mix in melted coconut oil or sunflower oil, honey and vanilla essence

4) Add in the dry ingredients and gradually add in the coconut milk, using an electronic whisk

5) Scoop the batter into muffin cases, filling them just over halfway

6) Bake for 25-30 mins

7) Macaroons should be slightly golden

8) Sprinkle on some sieved icing sugar

8) To add extra sweetness, add jam or cream to the top
