We all need that little boost of energy to get us through the day. There are lots of energy bars available out there to buy but they are quite expensive. So, as another option, you could make them at home and make a big batch that you can keep in the fridge! I have made my own energy bars and they were easy to make and took me about 10 minutes to prepare!

Easter Simnel Cake

It’s Easter Bank Holiday Weekend! I decided to make a traditional British Easter Cake for my Easter celebrations. It is called Simnel cake. Simnel cake is a light fruit cake made at Easter, originally made for the middle Sunday of Lent. It is usually made with 11 marzipan balls to represent the apostles, excluding Judas. This easter simnel cake has been adapted from Mary Berry’s recipe! Enjoy!

I couldn’t have a gluten free greek blog without sharing my simple and tasty pastitsio recipe. Pastitsio is an Italian word, but the Greeks and Mediterranean’s all have their own variations.
