I absolutely love lamb pasta bake. As you all have probably guessed, I don’t like faffing when it comes to my food. I like making grub that tastes good and I try to use ingredients that don’t cost the earth. Bish bash bosh job done! This week, I made a lamb pasta bake, with courgettes, spring onions and parmesan cheese, with a few large spoonfuls of Greek yoghurt.
This year I travelled to Greece for a week. I visited Lefkada, and pretty much the whole of the Ionian! Being a Coeliac abroad isn’t always easy, so in this post I have featured some of the food I had that will be fine for someone with coeliac disease and of course the places that I visited along the way. I couldn’t have a gluten free greek blog without sharing my simple and tasty pastitsio recipe. Pastitsio is an Italian word, but the Greeks and Mediterranean’s all have their own variations. This is a dish that my mum has made time and time again for family and friends who may not want to stuff their faces with souvlaki but still want a ‘little’ meat.
